La Jabugueña’s Morcón Bellota 100% Raza Ibérica is produced from purebred Iberian pigs raised free-range in Spain’s iconic Dehesa oak forests. During the montanera season, the pigs feed exclusively on acorns (bellotas), giving the meat exceptional richness, aroma, and depth.
Unlike chorizo, morcón is stuffed into a wider natural casing, allowing for slower curing and a more pronounced, complex flavor. Seasoned with sweet paprika, garlic, and natural spices, it is slowly air-cured following traditional methods to achieve a firm yet succulent texture and intense character.
