Brillat-Savarin Affiné is an exquisite triple-crème cheese from the Île-de-France or Burgundy regions, named after the famed French gastronome Jean Anthelme Brillat-Savarin. Enriched with extra cream, it contains up to 75% fat in dry matter, making it one of the most indulgent soft cheeses. The affiné (aged) version is ripened for 1–2 weeks, developing a velvety bloomy rind and a silky, dense interior with an intensely creamy and refined flavor.
