Brie de Meaux is the original and most prestigious Brie, protected by AOP (Appellation d’Origine Protégée) status and made exclusively in the Île-de-France region near Paris. Crafted from raw cow’s milk, it is aged for 6 to 8 weeks, developing a soft, creamy paste under a delicate white Penicillium rind. This cheese has been produced since the Middle Ages and was crowned the "Prince of Cheeses" at the Congress of Vienna in 1815.
