Beaufort 18 Months
Aged Alpine Raw-Milk Cheese from Savoie, France
Contents: Hard raw cow’s milk cheese, AOP-certified, aged for 18 months
Product Description
Beaufort 18 Months is a traditional French mountain cheese from the Savoie region, made exclusively from raw milk of Tarentaise and Abondance cows grazing on alpine pastures. This AOP-certified cheese is aged for at least 18 months in cool, humid caves, developing a rich, dense paste and a signature concave rind formed by its unique mold. Known as the “Prince of Gruyères,” Beaufort is distinguished by its refined alpine flavor, natural complexity, and exceptional aging potential:
-
Produced using raw summer milk from alpine cows
-
Hand-pressed in large, round wheels with signature concave shape
-
Aged slowly on spruce boards in mountain cellars
-
Pale ivory to deep yellow paste, depending on season
-
100% natural, lactose-free, and crafted with heritage techniques
Tasting Notes
-
Deep, savory flavor with notes of hazelnut, butter, and wildflowers
-
Silky-firm, elastic texture that melts on the palate
-
Complex, lingering finish with hints of alpine herbs and fresh hay
-
Balanced umami and sweetness, intensified by long aging
Serving Suggestions
Serve at room temperature to fully express its aroma and richness:
-
Pair with raw honey, walnuts, and dried apricots
-
